Trying to eat healthy for an Italian girl who grew up eating copious amounts of bread, cheese and pasta, well, let’s just say that it is quite challenging to say the least. I will not let the difficulty deter me though! I can eat healthy–IF it’s delicious. And, this paleo rotisserie chicken salad recipe is just that, delicious.
It can be hard to find all organic ingredients, and stay within a single mom budget. There is also the time factor. Thankfully, there is a grocery store near me that makes organic rotisserie chicken at a surprisingly affordable price. However, there is also letting it roast in the crock pot while I am at work option as well!
OK, let’s get on with what you came here for! My delicious, hearty, and filling recipe!
Paleo Rotisserie Chicken Salad Recipe
This salad serves one. Two if you are not much of an eater! Regardless, you can certainly double or increase as much as you like to accommodate your needs.
Ingredients:
2 cups romain lettuce
1 cup organic rotisserie chicken
1/2 avocado sliced thin
1/4 cup gourmet mixed, sliced mushrooms
1/2 cup sliced organic cucumber
6 large natural black olives, pitted (I use Lindsay)
4 slivers of sliced white onion
10 whole, blanched almonds
1 slice of organic nitrate free bacon, chopped. (I use Applegate.)
2 TBLSP Primal Kitchen Caesar Dressing & Marinade. (Made with avocado oil.)
Cracked black pepper to taste.
I arranged the romain lettuce on bottom of a large plate. Then I placed chicken in center. Then I arranged all the other veggies, nuts, olives, and bacon. Finally, I topped with cracked pepper and the Caesar Dressing.
Then, I pour myself a glass of good cab, and chowed down on this very delicious salad!
