Cheesy Mexican Rotisserie Chicken Casserole

I developed this recipe based off of one that an old friend used to make. I added my own twists to fit my tastes, and created a tasty Cheesy Mexican Rotisserie Chicken Casserole! Not only is this a family favorite, it is a crowd-pleaser for any potluck. My husband takes it every year to his job’s Christmas party, and it is what I take to any event where I need to bring a main dish. I always get rave reviews, and never have leftovers! I hope that you enjoy it too!

Cheesy Mexican Rotisserie Chicken Casserole Recipe

Ingredients:

The breast meat from a large rotisserie chicken, shredded (note: I get mine at Costco)
10 ounce bag of frozen broccoli florets, thawed (note: I use Cascadian Farm)
16 ounce package Mexican Velveeta, melted
2 – 10 3/4 ounce cans of Campbell’s cream of chicken soup
4.5 ounce can of Old El Paso chopped green chilies
3 cups of Minute Rice
3 cups of water (for cooking the rice)
Pepper to taste

You will also need a greased 13×9 baking dish

Note: While it is not required to use the same brands that I do, after testing and tweaking, these are the ones that make the very best version of this dish.

Preheat oven to 375 degrees.

Cook the Minute Rice following the directions on the box. Keep covered and set aside.

After you have gotten every bit of breast meat that you could possibly find on your rotisserie and shredded it, toss it in a large bowl with the thawed broccoli florets.

Toss the broccoli florets and rotisserie breast meat together in a large bowl.

Next, add the 2 cans of cream of chicken soup, chilies, and pepper to taste. Mix will.

Make sure you mix it well!

Now comes the best part!! It is time to add the delicious Velveeta goodness. Simply pour the melted cheese over your mixture and mix it until it is one with your other ingredients.

Liquid Gold!

I like to add the hot Minute Rice last, just to make sure the Velveeta stays nice and creamy. So, once you have mixed the cheese, pour the hot rice over your mixture, and mix well.

Isn’t it purdy?

Finally, pour all of the deliciousness into your greased 13×9 baking dish. Note: butter is always the best form of greasing, however, I also use olive oil. So, whatever you have on hand is fine.

Ready to be baked!

Bake for 30-45 minutes at 375 degrees, or until beautiful and golden! Serve with your favorite garlic bread and salad!

    I always have a hard time deciding what to make with leftover rotisserie chicken. For us, it’s usually soup. I would not have thought to pair broccoli and green chilies together but it looks really yummy!
